Summer in BC means berries and stone fruit at their absolute peak. This workshop celebrates that abundance with pies built around the best of what local farms have to offer.
Depending on the week, you might be working with blueberries from the Fraser Valley, peaches from the Okanagan, cherries from Kelowna, or apricots from the Similkameen. Andrea selects whatever is freshest from the farmers market that week, so every summer session is a little different. That unpredictability is part of the fun.
The summer workshop covers all the fundamentals of pie-making, with a focus on fruit preparation techniques specific to summer ingredients. You will learn how to make pastry by hand, how to handle juicy berries without turning your filling into soup, and how to get a beautiful golden crust even in the heat. Andrea shares techniques for balancing sweetness, adding the right amount of thickener, and knowing when stone fruit is ready for the oven.
Plan for about two and a half hours. Groups are small, six to eight people, so everyone gets personal time with Andrea. All ingredients, tools, and equipment are provided. You will leave with a finished pie and the confidence to make more at home with whatever you pick up at the market.
Coffee from Panoramic and a slice of pie are included to fuel you through the afternoon.
