The Pie Shoppe is run by two sisters, Andrea and Stephanie French. Together, they've built something special in Vancouver.

Stephanie French

Owner, Coffee Roaster

Stephanie is the founder of Panoramic Coffee Roasters, a small-batch roasting operation dedicated to sourcing the finest single-origin beans from ethical, sustainable farmers around the world. Before opening The Pie Shoppe, she roasted coffee on a rooftop in Kitsilano, building relationships with coffee lovers and developing her palate for quality.

Her vision for The Pie Shoppe was simple: a place where people could taste hand-roasted coffee alongside hand-made pie, both sourced with the same care and attention to quality.

When she's not roasting beans or greeting customers, you might find her riding her bike to the shop, scouting for seasonal fruit at farmers markets, or collaborating with Andrea on this season's pie flavors.

Andrea French

Owner, Pie Maker

Andrea has been baking since her mama's kitchen growing up in Southern Ontario. She brings 15 years of professional baking experience to The Pie Shoppe, with a deep understanding of pastry, flavor development, and the craft of pie-making.

She is obsessed with seasonal fruit. Every year, she works with farmers across British Columbia to source the ripest peaches, the tartest apples, and the juiciest berries to fill her pies. Her knowledge of local producers and growing seasons informs every decision she makes in the kitchen.

Andrea also leads the Pie Shoppe's workshop program, teaching others the fundamentals of pie-making. She believes that good food tastes better when you understand where it comes from and how it's made.

how it started

In December 2012, as summer markets were coming to an end, Stephanie needed a new home for Panoramic Coffee Roasters. What better pairing with coffee than pie? She reached out to her sister Andrea, and together they decided to open The Pie Shoppe.

They found a small 300 square foot storefront in Vancouver's Chinatown. In just 9 days, they planned, designed, and built out the space. They installed a single oven, set up a counter, added a few chairs and benches, and opened their doors.

Working in the spirit of micro-entrepreneurs, they created something simple that people wanted. Using the bounty of local fruit available in BC, quality local grains, and a nostalgic approach to food, they built a place that felt like home to their community.

What started as a small experiment has grown into something much bigger. But the fundamentals remain the same: hand-made pies, hand-roasted coffee, and a deep commitment to supporting the farmers and producers who make this work possible.
