As summer markets came to end, owner and founder of Panoramic Coffee Roasters, Stephanie French, needed a new home for Panoramic Coffee. And what could be better with coffee than pie? Teaming up with sister Andrea, the two decided to start The Pie Shoppe: a place for customers to buy fresh beans, taste in season, organic and fairly traded coffee with a slice of hand made pie. After finalizing the idea, the small batch roasting operation was moved from its rooftop home in Kitsilano to a storefront in Chinatown. In a mere 9 days, the shop was planned, designed and constructed, within 300 square feet.

Having worked in Montreal, Ottawa and Vancouver over the last ten years making art, pastry and savouries it seemed a logical next step to continue in the micro entrepreneur spirit. The goal was to make something simple, that people want, while using the bounty of local fruit available in BC, quality grains and promote sharing (maybe longing for) a nostalgic experience - Pie & Coffee.

Alternating pie flavours are available over weeks and change with the seasons. The classics stay on the menu - Apple and Chocolate Pecan. The Pie Shoppe is not an espresso bar and seating is extremely limited. Coffee is hand drip only, by Pour Over method or Aeropress.

Why Chinatown? The French sisters wanted to join the other creative projects in the community - like Harvest, 221a/ 222, Project Space and The Parker.

The Pie Shoppe is simple: pies, coffee, a record player, the French Sisters father`s collection of vinyl and some cool art from artist friends. 

Sourcing


The Sister's focuses on buying seasonal ingredients from British Columbia, specifically the Fraser Valley, Okanagan and the local Islands.  Gathering from neighbouring shops, green grocers, and Vancouver Farmer's Markets.

With a strong emphasis on organic fruit, free ranges eggs, local dairy, Anita's Flour, and biodegradable packaging. The shop operated on an 'almost zero' waste system.

Over the years we have grown very fond of this province. Here are a few farmers, companies & other small businesses just like us that we support in our little shoppe.

All our fruit is from either BC Apple Growers, Chilliwack, Abbotsford or from a local supplier.
