This class is an introduction to pie making taught by head baker and co- owner of The Pie Shoppe Stephanie French, who will share with you lots of good advice and wisdom from her 30 yr of baking. Classes will be 3 hours long and teach students the techniques of hand mixed pastry and baking for a rustic “handmade” pie. The class will show you how to mix pastry by hand and not rely on a machine or store bought cardboard to do the work!
Students will produce their own dough, mill wheat on a home mill, and bake their own pie. As the class works through the practical parts of baking they will be lectured on the science of fats + wheat, farming, and health applications of good pie.
Only 10 students per class. Refreshments will be served.
